– Olive oil – Lean ground turkey – Yellow onion  – Green bell pepper  – Red bell pepper – Poblano pepper – Garlic – SPICES!!! – Beer – Tomato paste – Crushed tomatoes – Black beans

Ingredients

In a Dutch oven,  heat 2 tbsp of olive oil over medium high heat. Add ground turkey, breaking into crumbles.

Remove from the pan and reserve to a bowl.

Add the rest of the  oil, the onions, bell peppers, poblanos, and cook, stirring frequently, until onions are soft and start to brown.

Add garlic and spices and cook until fragrant.

Add the meat back in the pan.

Add beer.

Add tomatoes and tomato paste.

Stir well and bring to a boil.

Add the beans, reduce the heat and simmer covered for 1 hour minimum and up to 2 hours.
