Chocolate nice cream

A healthy treat made with frozen bananas, cacao powder, and zero added sugar!

  • Peel bananas and slice them about 1/2" thick. Lay the slices on a sheetpan lined with parchment paper and place it in the freezer for at least an hour until they are frozen.
  • Place frozen bananas in a food processor or high speed blender (Vitamix or similar). Do not use a regular smoothie blender, frozen bananas will not blend properly in it.
  • Add cacao powder, vanilla and soymilk.
  • Process until smooth, stopping to scrape the sides from time to time. The consistency should be thick like a soft serve ice cream.
  • Eat immediately or transfer to a freezer safe container for future use. If freezing, take it out 15 to 30 minutes prior to eating to let it soften a bit.
  • Serve with toppings of your choice!
