Red cabbage and apricot salad

This red cabbage apricot salad is colorful and delicious. It will provide your daily requirement of vitamin A and plenty of vitamin C

  • Slice cabbage very thin (1/8"). If using a food processor with slicing attachment, adjust the blade to level 3, or slice with a mandolin or a good knife. Place in a large mixing bowl.
  • Add lemon juice, olive oil, salt and pepper and toss well.
  • Chop apricots and parsley. Add to the bowl.
  • Serve immediately or refrigerate. The cabbage will continue softening up as it sits.

Notes

Option: add 1/4 cup of walnuts or hazelnuts.
