Slice cabbage very thin (1/8"). If using a food processor with slicing attachment, adjust the blade to level 3, or slice with a mandolin or a good knife. Place in a large mixing bowl.
Add lemon juice, olive oil, salt and pepper and toss well.
Chop apricots and parsley. Add to the bowl.
Serve immediately or refrigerate. The cabbage will continue softening up as it sits.
