Sometimes you just need a simple meal with few ingredients that comes together in no time but will not compromise on flavor. This salmon with mustard and rosemary glaze is the perfect answer. Literally 5 ingredients. How simple is that? One of them is even optional, but in my opinion highly desirable, read on to see what I’m talking about.
This recipe also happens to be one of my favorites because we grow so much rosemary in our garden that I’m always looking for ways to use it.
Ingredients:
Salmon. Some people are very particular about what salmon they will or will not buy. I tend not to overthink my choice of salmon and go for what’s available at the best price at my local store. There is a lot of information out there about wild vs farmed, Atlantic vs Pacific, frozen vs fresh, which salmon variety, which is the most sustainable salmon, which has the lowest amount of heavy metals, etc. I sometimes refer to the Monterey Bay Aquarium Seafood Watch website which is considered the authority in the matter. But the bottom-line is, the health benefits of eating salmon are such that in comparison, any risks from consuming sub-optimal salmon are infinitesimal…
Mustard. Everyone should keep Dijon mustard around at all times. My personal favorite is Maille, made according to the original French recipe. In this salmon with mustard and rosemary glaze, I like to use a combination of Original Dijon mustard and Old Style (whole grain) mustard. It adds a visual interest and a nice little bite that will transform your dish from ordinary to restaurant-worthy!
Rosemary. Fresh rosemary is best and happens to grow like weeds in my garden. But dried will do in a pinch.
Olive oil. Any extra virgin olive oil will do here since you’re using a very small amount. My favorite is always the very versatile Partanna Sicilian Extra Virgin Olive Oil.
How to make salmon with mustard and rosemary glaze:
Preheating the baking sheet is optional but will help create a crispier skin if you like to eat it. Salmon skin provides an extra boost of Omega 3’s, vitamins and minerals that have great benefits for heart health and vision, amongst other things.
Simply mix the topping ingredients in a small bowl. Lay a sheet of parchment paper on a cutting board, place your salmon pieces on it, and top with the mix.
Once your oven is hot, carefully slide the parchment sheet with the salmon onto the preheated baking sheet. Bake for 12 to 15 minutes at 400F (the thicker the salmon, the more time it will take). Do not overcook or it will dry out.
Enjoy on its own or with a drizzle of lemon juice.
What to serve with salmon with mustard and rosemary glaze:
Serve with a side of whole grains (brown rice, black rice, quinoa, or better yet a mix of different grains. Add a vegetable of your choice: steamed broccoli, sauteed spinach, Brussel sprouts, asparagus, or zucchini will pair very nicely with it. You know, we also eat with our eyes…so make it a colorful plate!

Ingredients
- 12 oz salmon fillets (4 pieces)
- 1 tbsp Dijon mustard
- 1 tbsp Old style whole grain mustard
- 1 tbsp fresh rosemary, chopped or 1 tsp dried
- 1 tbsp olive oil
Instructions
- Place a baking sheet in your oven and preheat it to 400°F
- Place a piece of parchment paper on your cutting board and place the salmon fillets on top.
- In a small bowl, mix both mustards, rosemary and olive oil.
- Spread the mustard glaze over the top of the salmon.
- When your oven has reached temperature, carefully slide the parchment paper onto the hot baking sheet. Return to the oven and bake for 12 to 15 minutes depending on the thickness of your salmon.
- Serve immediately.
