Are you ready for another healthy summer treat? This peanut butter nice cream fits the bill. Made from 2 ingredients: bananas and peanut butter… It is decadent yet guilt-free. No added sugar and a natural boost of fiber, protein and potassium.
It is delicious on its own, but you could customize it to your liking. Here, I sprinkled it with unsweetened coconut flakes and raw cacao powder. You could add some flavorings like vanilla, cinnamon, or even chile pepper. You could blend in a few dark chocolate chips or shavings. Top it with fruit or nuts…

The ingredients
Your bananas should be ripe but not overly – just starting to have a few brown spots on them. That will produce the best consistency.
Chose a smooth (creamy) unsalted peanut butter with no additional ingredient – just 100% peanuts. It’s available almost everywhere now. Stay away from processed nut butters such as the classic Jif brand that contain added oils, sugar and salt. Here are the ingredients in JIF’s classic creamy peanut butter: Made From Roasted Peanuts And Sugar, Contains 2% Or Less Of: Molasses, Fully Hydrogenated Vegetable Oils (Rapeseed And Soybean), Mono And Diglycerides, Salt.
Hydrogenated oils are particularly harmful as they are trans-fats. A loophole in the trans fat regulations allows for products with less than 0.6 of a gram per serving to claim zero trans fat on the nutritional label. That is still too much trans fat. Stay away from it.
The process
Making Peanut butter nice cream is almost child play – except it requires handling a food processor with sharp blades, I give you that… So don’t let your children handle it please! They can watch you and drool as things are happening…
Peel the banana and slice it. Place slices on a parchment lined baking sheet or any freezer-safe dish that will fit in your freezer. Freeze them for 4 hours minimum, then either use immediately or save them in an airtight container for future use.
Place frozen banana chunks in a food processor. Do not use a blender as this recipe doesn’t have enough liquid to be processed in a blender. I kid you not here. People have destroyed perfectly good blenders trying this.
Add peanut butter. Process in pulse mode until it reaches a soft-serve consistency, stopping to scrape the sides as necessary. It will take a couple of minutes.
Eat immediately or store in your freezer. Take out of the freezer 15 minutes before serving to soften it up.
