On the menu: salmon, roasted poblano peppers, black rice and pico de gallo.
Salmon is just seasoned with salt and pepper and grilled on a cedar plank, which gives it a nice smoky flavor. Make sure you soak your board for a few hours or overnight. Preheat your grill, add the board for 5 minutes. Flip it over and place the salmon on top. Close grill lid and cook for 15 minutes or more depending on the thickness.
Poblano peppers are tossed with EVOO and roasted at 425F for 25 minutes.
