– Oranges – Lime –Avocado – Jalapeno pepper – Red onion – Cilantro – Salmon – Blackening spices – Olive oil

Supreme oranges and lime: peel with a knife, removing all white pith. Section over a medium size bowl, cutting into bite size pieces as needed.

Add to the bowl chopped jalapeno, red onion, cilantro and cubed avocado.

Stir gently to mix well.  Set aside while you cook the salmon.

Spread blackening seasoning over the top of the salmon.

Place salmon flesh side down in a hot skillet with a tablespoon olive oil. Gently press with a spatula. Cook for about 4 minutes until crisp.

Flip the salmon over to crisp the skin side.  Cook another 5 to 6 minutes until the sides look opaque and the salmon is flaky.
