Tuna Fish Patties

These tasty tuna fish patties are the perfect way to incorporate more seafood into your meals. A few simple ingredients and a quick cook time mean they'll become a regular part of your meal rotation.

  • Flake tuna into chunks in a large mixing bowl. Add sundried tomatoes, Parmesan, shallots, parsley, green onions, breadcrumbs, salt and pepper.
  • Mix with a fork until combined.
  • Beat the eggs slightly, add them to the bowl and stir well.
  • Form the mixture into 8 patties.
  • Heat a large cast-iron or non-stick skillet over medium high heat. Add a tablespoon olive oil. Cook 3 minutes on each side.

Notes

To bake these in the oven rather than pan fry: line a baking sheet with parchment paper and spray lightly with olive oil. Bake at 400F for 15 minutes on one side, then flip over and bake another 5 minutes.
