Heirloom Tomato Bruschetta

  • Start by mincing the garlic.
  • Heat olive oil in a small skillet over medium-low heat. Add garlic and cook until it is softened but not browned, about 1 minute.
  • Pour out into a mixing bowl and let it cool while you prepare the other ingredients.
  • Dice the tomatoes small and add them to the bowl with the cooled oil mixture.
  • Add the rest of the ingredients to the bowl. Toss well.
  • Serve over toasted bread.

Notes

  • To cut basil ribbons, stack leaves, roll them tightly, then slice across the rolled leaves with a sharp knife.
  • If short on time, skip the step to heat the garlic in the oil. The garlic taste will be more pungent but still delicious.
  • Use a nice crusty bread, such as whole wheat or sourdough. Toast it lightly and serve warm for best taste.
  • Substitute heirloom tomatoes with any ripe, sweet, and juicy tomato, like Roma.
  • Add a touch of grated Parmesan for an extra burst of flavor.
