- 1 lb heirloom tomatoes diced small
- 2 tbsp extra virgin olive oil
- 1 tbsp garlic minced
- 1 tbsp balsamic vinegar
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1/4 cup fresh basil sliced in ribbons
- 6 slices whole wheat bread or sourdough bread
Start by mincing the garlic.
Heat olive oil in a small skillet over medium-low heat. Add garlic and cook until it is softened but not browned, about 1 minute.
Pour out into a mixing bowl and let it cool while you prepare the other ingredients.
Dice the tomatoes small and add them to the bowl with the cooled oil mixture.
Add the rest of the ingredients to the bowl. Toss well.
Serve over toasted bread.
- To cut basil ribbons, stack leaves, roll them tightly, then slice across the rolled leaves with a sharp knife.
- If short on time, skip the step to heat the garlic in the oil. The garlic taste will be more pungent but still delicious.
- Use a nice crusty bread, such as whole wheat or sourdough. Toast it lightly and serve warm for best taste.
- Substitute heirloom tomatoes with any ripe, sweet, and juicy tomato, like Roma.
- Add a touch of grated Parmesan for an extra burst of flavor.
