Celery mushroom salad

A classic Italian salad, combining crunchy celery, soft mushrooms in a bright lemon dressing, topped with a bit of nutty saltiness from Parmesan cheese. A great way to use up that package of celery that's been sitting in your refrigerator...

  • Press the juice of 1 lemon into a large bowl
  • Add salt and pepper, stir to dissolve
  • Add olive oil
  • Slice celery and mushrooms very thin and add to the bowl.
  • Add parsley and mix throroughly.
  • Shave fresh parmesan on each individual serving.



If you let the salad sit, the mushrooms will get softer. If you prefer your mushrooms on the crunchy side, cut them thicker and add them at the last minute.
