Watermelon and feta salad
This salad is amazingly refreshing and will be a hit at your next pool party.
Servings: 12
Ingredients
- 1 watermelon (small – 5 lb)
- 1 red onion
- 4 ounces feta cheese; crumbled
- 1/4 cup red wine vinegar
- 1/2 tsp kosher salt
- 1/4 tsp Freshly ground black pepper
- 1/2 cup extra-virgin olive oil
- 4 tablespoons chopped fresh mint
- 6 whole mint sprigs
Instructions
- Cut the flesh from the melon and cut into bite size pieces, removing and discarding the seeds, and place in a large bowl.
- Peel and slice the onion into thin strips. Add to the bowl.
- In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, creating an emulsion. Add in the chopped mint, taste, and adjust seasonings.
- Add the feta cheese crumbles to the melon and onion. Pour the dressing over them and toss gently until everything is coated and evenly mixed. Garnish with mint sprigs.

This was excellent EVEN though I didn’t have red wine vinegar. I used balsamic vinegar.
Even with the “wrong” vinegar, this was a really good salad. Really good.
I plan to buy red wine vinegar tomorrow so that I can make this salad again as intended.
