Kale and Apple Salad
Ingredients
- 8 cups kale sliced thin
- 1 apple
- 2 oz Cheddar cheese
- 1/4 cup walnuts
- 1/2 tsp Dijon mustard
- 1 tbsp lemon juice
- 1 tbsp white balsamic vinegar
- 2 tbsp extra virgin olive oil
- 1/8 tsp salt
- fresh ground pepper to taste
Instructions
- Slice kale thin and place in a large bowl. Add a pinch of salt and 1 tsp olive oil. Massage with your hands for a minute until the leaves feel soft.
- Wash the apple and cut it in small cubes, working around the pit (leave the skin on for added nutrition and color). Add to the bowl.
- Dice the cheddar in 1/2" pieces. Add to the bowl.
- In a small bowl, mix Dijon mustard, salt, pepper, lemon juice, white balsamic vinegar and olive oil together. Pour over the salad bowl and toss until combined.
- Served topped with walnuts.
